Vegetarian Stew with Lima Bean, Coconut and Miso

One-pot meals are by far my favorite for busy weeknights. Easy to make and quick to clean up. These are key criteria when I don’t have time to devote to cooking, but still want a tasty dish. This vegetarian stew sure fits the bill!

Miso paste is one of my staples in the kitchen, as it adds the salty, umami touch I love so much, and perfectly complements the sweetness of the coconut.

I like to serve this vegetarian dish with a good crusty multigrain bread, to make it even more complete and up the protein content. You can also make this recipe with whatever vegetables you have on hand, such as mushrooms, eggplant or rapini. You’re free to experiment !

Servings : 4

Preparation time : 5 minutes

Cooking time : 30 minutes

Ingredients

  • 1 tbsp (15ml) extra-virgin olive oil
  • 1 yellow onion, chopped
  • 2 zucchinis, thinly sliced
  • 3 garlic cloves, chopped
  • 2 cans lima beans, one with liquid and one drained
  • 1 can coconut milk, just the cream on top*
  • 1.5 tablespoons (22.5ml) miso paste
  • 2 cups (500ml) fresh spinach                                                                                                                       

*If you need a little inspiration to finish the rest of the coconut milk, here are a few ideas: freeze it in an ice cube tray and put in your smoothies, add it to your next curry or substitute some of the cooking water/liquid when cooking rice!

Preparation

  1. Preheat the olive oil in a large frying pan over medium heat. Add the onion and zucchini, and sauté for 5 to 10 minutes. The aim is to brown quickly, not to cook them all the way through!
  2. Add the garlic and sauté for 1-2 minutes.
  3. Add all the remaining ingredients except the spinach, i.e. the lima beans (one can drained and one with its liquid), coconut cream and miso. Simmer for 10 minutes uncovered over medium-low heat.
  4. Add the spinach, mix well and simmer for another 10 minutes.
  5. Serve your vegetarian stew with a crusty multigrain bread.
