Pumpkin chocolate protein squares

I’m sharing a recipe for a comforting and nourishing snack that is perfect for the fall season. Pumpkin and autumn spices, if you’re like me, you can’t get enough! This quick and easy recipe of protein squares is a great addition to your Sunday meal prep. Each square contains 8g of protein and 5g of fiber, thanks to the lentils and Greek yogurt!

Personally, I enjoy these squares as a satiating afternoon snack or to satisfy my sweet tooth at the end of the evening. Two or three squares can also make a quick breakfast-on-the-go!

Portions: 12 squares

Prep time: 15 minutes

Cooking time: 40-50 minutes

Ingredients

  • ½ cup (125 ml) coral lentils, dried
  • 1 cup (250 ml) water
  • 2 ½ cups (625 ml) rolled oats
  • 2 tsp (10 ml) pumpkin pie spice mix
  • 1 tsp (5 ml) cinnamon
  • 2 tbsp (30 ml) ground flaxseed
  • 1 tsp (5 ml) baking powder
  • ½ cup (125 ml) 2% milk
  • 2 eggs
  • ¼ cup (60 ml) 2% Greek yogurt
  • 1 cup (250 ml) pure pumpkin purée
  • 1 tsp (5 ml) vanilla extract
  • ¼ cup (60 ml) maple syrup
  • ½ cup (125 ml) semi-sweet chocolate chips

Preparation

  1. Bring lentils and water to the boil in a small saucepan. Reduce heat to low, cover and simmer for 10 minutes. Lentils should be cooked through. Set aside.
  2. Preheat oven to 350 degrees F.
  3. In a food processor, grind rolled oats into flour. Transfer to a bowl and add spices, baking powder and flaxseed. Set aside.
  4. In a second bowl, whisk eggs with yogurt, pumpkin purée, vanilla and maple syrup.
  5. Once the lentils have cooled, add them to the blender with the milk to make a smooth paste. Add to wet ingredients mixture.
  6. Add the dry ingredients to the wet ingredients a little at a time, avoiding over-mixing. Then fold in the chocolate chips.
  7. Pour mixture into a 9 x 9-inch square pan or similar. Bake for 30-35 minutes, or until a knife inserted in the middle comes out clean.
