Apple picking is a great family activity in the fall. Once the harvest has been brought home, it’s time to get cooking and enjoy this beautiful Quebec fruit! Here’s a recipe for homemade apple butter, infused with those fall flavors we love so much. This delicious recipe, comforting on those cooler days ahead, is perfect for a complete breakfast or snack.
Yield: Approximately ¾ cup apple butter
Preparation time: 10 minutes
Cooking time: 40 minutes
INGREDIENTS:
- 5 McIntosh, Royal Gala, or Cortland apples
- 1/3 cup (80ml) maple syrup
- 1 tbsp (15ml) ground cinnamon*
- 1 teaspoon (5 ml) ground nutmeg*
- 1 teaspoon (5 ml) ground ginger*
- 2 tbsp (30 ml) vanilla extract
PREPARATION:
- Core and dice the apples, keeping the peel on.
- In a large saucepan, combine apples, maple syrup and spices and bring to a boil. Cover and simmer over medium-low heat for 30 to 40 minutes.
- Halfway through cooking, purée apples with a blender or use a potato masher.
- Allow to cool, then refrigerate, preferably in an airtight container. Apple butter keeps for about 2 to 3 weeks in the refrigerator.
Tip for a nutritious, satiating breakfast or snack: Mix 1-2 tbsp apple butter with ¾ cup plain 2% Greek yogurt and ¼ cup granola for a little crunch.
* You can replace any or all spices (cinnamon, nutmeg, and ginger) with 4-spice mix to taste (1 to 2 tsp).
