This fresh, crisp asparagus salad is perfect for busy weekday dinners. It’ll charm you with its colors and creamy yogurt dressing. Its tangy flavour adds a tasty touch to every bite. Bonus! You’ll get a good portion of greens. As well as adding color to your plate, greens offer a host of overall health benefits. What’s more, salmon completes the picture with its protein and omega-3 content!
So, you’ve got a salad that’s both easy on the eye and good for the body!

Ingredients
- 1 bag green beans (340g)
- 1 bunch asparagus
- 14 blackberries (about ½ package), halved
- ½ cup roasted hazelnuts
- 1 fresh salmon fillet (360g)
Creamy yogurt sauce
- 2 tbsp (30 ml) plain Greek yogurt
- 1 tbsp (15 ml) honey
- Zest of ½ lime
- 1 tsp (5 ml) Dijon mustard
- 1 tsp (5 ml) whole-grain mustard
- Salt, pepper and paprika to taste
Note:
- You can replace the hazelnuts with another kind of nut, or with cheese.
- You can also replace the blackberries with another fruit you have on hand, or one you simply prefer!
Preparation
- Preheat oven to 400°F.
- Remove ends from beans and asparagus.
- Optional: keep 3 to 4 asparagus spears aside. Peel and set aside in a little water with a few drops of lemon juice (to garnish the salad).
- Bring a large pot of water to the boil. Boil beans and asparagus for 1-2 minutes, drain and set aside.
- Drizzle the salmon with honey and sprinkle with paprika. Place in the oven and bake for 12 minutes*.
- Meanwhile, mix all ingredients for sauce (yogurt, honey, zest, mustards and spices).
- Roast hazelnuts in a skillet over medium heat (3 to 6 minutes), stirring constantly.
- Assemble asparagus salad. In a bowl, combine green beans, asparagus, blackberries, and hazelnuts. Add the dressing and chopped salmon or, when ready to serve, crumble directly onto each plate.
* You can also cook your salmon in an air fryer. Cut your salmon into 4 pieces and cook at 400°F for 9 minutes.
