Raspberry Matcha Chia Pudding

Get your Mason jars, it’s time for this wonderful chia pudding! Have you seen the beautiful color? Here’s a pudding recipe made with chia seeds, matcha tea powder and an express raspberry compote. A snack that’s both nutritious and energy-boosting, thanks to the matcha. What’s more, what we love about this snack is that it’s so quick and easy to prepare!

Quantity: 1 portion

Preparation time: 5 minutes

Cooking time: none!

Rest in refrigerator: 2 hours minimum or overnight

Ingredients

  • 1/3 cup almond drink (you can use cow’s milk or any other plant-based beverage)
  • ½ tsp (2.5ml) matcha tea powder
  • 1 tbsp maple syrup
  • 2 tbsp (30ml) black chia seeds
  • ½ cup fresh or frozen raspberries (or other berries of your choice)

Note:

  • You can adjust the amount of liquid (vegetable drink or milk) depending on the texture you’re looking for.
  • You can use stevia as a sweetening agent instead of maple syrup if desired: ½ tsp powdered stevia or 2-4 drops liquid stevia.
  • The pudding keeps for 3 to 4 days in the refrigerator.

Preparation

  1. In a Mason jar, add almond drink, matcha and maple syrup (or stevia). Close container and shake vigorously to mix well.
  2. Add chia seeds and stir again until seeds are immersed in liquid. Place the Mason jar in the fridge for a minimum of 2 hours or overnight.
  3. In a bowl, mash the fruit with a little water if necessary to form a purée. Place in the refrigerator for the same length of time as the pudding.
  4. Once your chia pudding is ready, pour the fruit purée over the top. You can also add granola or seeds to taste.
