Maple Pulled Pork and Coleslaw Sandwich

If there’s one recipe that makes everyone happy, this is the one! Kids and adults alike will love it. With the sugaring-off season upon us, and if, like me, you’re taking advantage of this time of year to fill up on maple syrup, then what better way to kick it off than with a recipe for Maple Pulled Pork. It’s also a dish that’s well-suited to large gatherings, since pork shoulder roast is rarely found in small quantities. Why not invite your family and friends over, and the leftovers are great for weekday lunches!

I decided to pair this recipe with a nice, simple coleslaw, to add texture to the sandwich and balance the sweetness of the barbecue sauce with a little tartness.

This recipe works just as well in the slow cooker as in the oven. I’ve indicated the temperature and time equivalents in the instructions below.

Portions: 8

Preparation time: 1 hour

Cooking time: 8 hours in slow cooker OR 2 hours in oven

Ingredients: Maple pulled pork

  • 8 hamburger-style whole-wheat buns
  • 1 pork shoulder roast (between 1.6 and 2kg)
  • Salt and pepper to taste
  • ½ cup (125 ml) maple syrup
  • 1 cup (250 ml) ketchup
  • 1/3 cup white wine vinegar (or other)
  • 2 tbsp (30 ml) Dijon mustard
  • 2 tbsp (30 ml) Worcestershire sauce
  • 1-2 tbsp (15-30 ml) red chili flakes or to taste
  • 4 garlic cloves, finely chopped

Ingredients: Coleslaw

  • 3 cups (750 ml) red cabbage, thinly sliced with mandolin or finely hand chopped
  • 1 large carrot, grated
  • 3 tbsp (45 ml) white wine vinegar (or other vinegar)
  • 2 tbsp (30 ml) olive oil
  • Salt and pepper to taste

Preparation

  1. Using a sharp knife, remove excess fat from around the meat. Season meat with salt and pepper.
  2. In a slow cooker, combine all ingredients for the maple barbecue sauce.
  3. Add meat and coat well with sauce.
  4. Cover and cook on low for 8 hours. This can also be done in an ovenproof casserole dish (which is what I did!). In this case, cook at 325°F for 2 hours.
  5. Meanwhile, add all the coleslaw ingredients to a bowl and mix well. Refrigerate.
  6. Once cooked, remove meat from container. Shred with two forks and set aside in a bowl.
  7. Meanwhile, reduce the sauce by half in a small saucepan, then add to the meat.
  8. Now it’s time to assemble the sandwiches! Divide the coleslaw and maple pulled pork equally among the 8 hamburger buns.
