Leek and Potato Spanish Omelette (tortilla de patatas)

A new breakfast suggestion for your next family brunch! I’m revisiting this Spanish classic I grew up with, by adding leeks. Make way for the tortilla de patatas, commonly known as the Spanish omelette.
I like to serve this tortilla de patatas with other Spanish brunch classics, such as ham, tomato salad and cheese. It’s quite a change from our Quebec brunches!
The foolproof trick to a successful Spanish omelette? Don’t wait until it’s fully cooked before turning it over in the pan. Make sure the eggs are still slightly runny.

Cooking Time: 35 minutes
Ingredients
- 6 eggs
- 1 small yellow onion, thinly sliced
- 1 leek, thinly sliced into rings*, finely sliced
- 3 medium-size potatoes, thinly sliced*, sliced into thin rings
- 2 tbsp (30 ml) olive oil
- ¼ tsp. salt
*With a mandolin if you have one!
Preparation
- In a skillet at least 10 inches in diameter, or the size of a large standard plate, add half the olive oil and preheat over medium heat.
- Add the potato slices and sauté until softened and lightly browned, about 20 minutes. It’s okay if the pan looks a little overcrowded, that’s the point! We want it to create steam between the potato slices.
- Meanwhile, in a second frying pan, sauté the leek and onion with the remaining olive oil. When softened and golden, set aside.
- In a large bowl, lightly whisk the 6 eggs together. Add salt, potatoes, leek and onion. Mix well and return to the pan over medium-low heat. Cook for 10 minutes, or until the sides of the tortilla seem to solidify, but not the top. Do not stir once in the pan!
- Place a plate on top of the tortilla, carefully turn it over and return it to the pan. Continue cooking for 1-2 minutes, then remove from heat.
- Let stand a few minutes before serving.
