Leek and Potato Spanish Omelette (tortilla de patatas)

A new breakfast suggestion for your next family brunch! I’m revisiting this Spanish classic I grew up with, by adding leeks. Make way for the tortilla de patatas, commonly known as the Spanish omelette.

I like to serve this tortilla de patatas with other Spanish brunch classics, such as ham, tomato salad and cheese. It’s quite a change from our Quebec brunches!

The foolproof trick to a successful Spanish omelette? Don’t wait until it’s fully cooked before turning it over in the pan. Make sure the eggs are still slightly runny.

Prep time: 10 minutes

Cooking Time: 35 minutes

Ingredients

  • 6 eggs
  • 1 small yellow onion, thinly sliced
  • 1 leek, thinly sliced into rings*, finely sliced
  • 3 medium-size potatoes, thinly sliced*, sliced into thin rings
  • 2 tbsp (30 ml) olive oil
  • ¼ tsp. salt

*With a mandolin if you have one!

Preparation

  1. In a skillet at least 10 inches in diameter, or the size of a large standard plate, add half the olive oil and preheat over medium heat.
  2. Add the potato slices and sauté until softened and lightly browned, about 20 minutes. It’s okay if the pan looks a little overcrowded, that’s the point! We want it to create steam between the potato slices.
  3. Meanwhile, in a second frying pan, sauté the leek and onion with the remaining olive oil. When softened and golden, set aside.
  4. In a large bowl, lightly whisk the 6 eggs together. Add salt, potatoes, leek and onion. Mix well and return to the pan over medium-low heat. Cook for 10 minutes, or until the sides of the tortilla seem to solidify, but not the top. Do not stir once in the pan!
  5. Place a plate on top of the tortilla, carefully turn it over and return it to the pan. Continue cooking for 1-2 minutes, then remove from heat.
  6. Let stand a few minutes before serving.
