Healthy Date Cookies

A simple snack that’s great on the go: Healthy Date Cookies! I also like to have one for breakfast with a bowl of Greek yogurt for a more nourishing meal.
This cookie recipe, sweetened with dates, works well with whatever kind of seeds and nut butter you have on hand. The seed blend used here gives us interesting sources of omega-3, an essential fat for an anti-inflammatory diet! It’s found in the chia seeds, the flax seeds and the pumpkin seeds.
Eat a single cookie as a quick snack or accompany it with a little yogurt (single serving) or cheese for a more satiating snack.
