C\u2019est pourquoi plus votre portion de viande cuit, plus elle rapetisse. De plus, la perte de poids est plus importante avec les cuissons longues, comme les mijot\u00e9s ou les brais\u00e9s, qu\u2019avec les cuissons courtes, comme les saut\u00e9s ou les grillades.<\/p>\n\n\n\n<p>Une portion de viande et substituts \u00e9quivaut \u00e0 90&nbsp;g de viande ou de poulet ou \u00e0 120&nbsp;g de poisson. Ces poids correspondent \u00e0 la quantit\u00e9 de chair pr\u00eate \u00e0 manger, c\u2019est-\u00e0-dire d\u00e9soss\u00e9e et cuite.
