Here’s a beautiful and refreshing recipe perfect for summer terraces! It’s one of my favourites, and it’s a huge success every time I prepare it for friends! It may seem weird that the main ingredient is watermelon, but rest assured, with all the added ingredients, it’s a perfectly balanced salad that’s salty, sweet, and bitter all at the same time.

Ingredients
Juice and zest from 2 limes
20 ml (4 teaspoons) olive oil
1 kg watermelon, cut into slices (without peel)
125 ml (1/2 cup) feta cheese, crumbled
60 ml (1/4 cup) red onion, thinly sliced
60 ml (1/4 cup) fresh mint, chopped
1,25 ml (¼ teaspoon) salt
0,625 ml (1/8 teaspoon) pepper
Each serving of this recipe contains:
135 calories / 22 g carbs / 7 g fat / 3 g proteins / 1 g fibre
Directions
- In a small bowl, mix the lime juice and zest with olive oil. Add salt and pepper.
- Spread the slices of watermelon on two plates, and garnish with feta cheese, red onion, and mint.
- Drizzle the dressing over the slices of watermelon.
