Prep time: 25 minutes
Cooking time: ~ 10 minutes
Ingredients
- 1 cup (250 ml) cooked bulgur
- 1 can lentils (540ml), drained
- 2 cups (500 ml) lettuce, chopped
- ½ cup (125 ml) red onion, finely diced
- ½ cup (125 ml) cucumber, coarsely sliced
- Half a green apple, coarsely sliced
- ½ cup (125 ml) feta cheese, crumbled
- Juice of half a lemon
- ¼ cup (60 ml) extra-virgin olive oil
- ½ cup (125 ml) dill, chopped
- ½ cup (125 ml) parsley, chopped
Preparation
- Cook bulgur according to package directions.
- Once cooked, allow to cool.
- Combine all ingredients in a large bowl and serve!
