Healthy Date Cookies

A simple snack that’s great on the go: Healthy Date Cookies! I also like to have one for breakfast with a bowl of Greek yogurt for a more nourishing meal.

This cookie recipe, sweetened with dates, works well with whatever kind of seeds and nut butter you have on hand. The seed blend used here gives us interesting sources of omega-3, an essential fat for an anti-inflammatory diet! It’s found in the chia seeds, the flax seeds and the pumpkin seeds.

Eat a single cookie as a quick snack or accompany it with a little yogurt (single serving) or cheese for a more satiating snack.

Portions: 8

Prep time: 15 minutes

Cooking time: 10 minutes

Ingredients

  • 1 cup (150g) dates
  • 1 cup (250 ml) rolled oats
  • ½ cup (125 ml) dried cranberries
  • ¼ cup (60 ml) peanut butter
  • ¼ cup (60 ml) pumpkin seeds
  • 15 ml (1 tbsp) chia seeds
  • 15 ml (1 tbsp) ground flax seeds
  • 5 ml (1 tsp) cinnamon

Preparation

  1. Preheat oven to 375 degrees F.
  2. Soak dates in 1/3 cup boiling water. Let stand 5 to 10 minutes while you prepare the rest of the recipe
  3. In a bowl, add all ingredients except dates.
  4. In a blender, purée the dates and water. Add to bowl and mix well to incorporate.
  5. On a baking sheet, shape into 8 cookies and bake for 10 minutes.
  6. Let cool for a few minutes before enjoying your healthy date cookies!
