- 340 g (2 1/4 cups) unbleached all-purpose flour
- 170 g (3/4 cup) vegetable margarine
- 100 ml ice water, about ½ cup
Tourtière
- 3 medium potatoes, peeled, coarsely chopped
- 200g ground veal, extra lean
- 200g ground beef, extra lean
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 cup (250ml) celery, diced
- 1 cup (250ml) carrots, diced
- Salt and pepper to taste
- 1 cup (250ml) sodium-reduced beef broth
- 1/3 cup (80ml) maple syrup
- 1 beaten egg
PREPARATION:
- In a food processor, blend flour and margarine, then gradually add water, adjusting amount as needed.
- Remove dough from processor and shape into two discs, then wrap in plastic wrap and refrigerate.
- Preheat oven to 350°F.
- Place potatoes in a pot and cover with water. Bring to the boil and cook until tender.
- Meanwhile, in a skillet over medium heat, cook onion, garlic, vegetables, and meat, stirring constantly, for about 10 minutes. Season with salt and pepper.
- Gradually stir in beef broth and maple syrup.
- Remove from heat, drain, and mash the cooked potatoes with a potato masher and add to the meat mixture. Set aside.
- Roll out the two pieces of dough and place one in a 20cm-diameter ovenproof mould.
- Pour the meat and potato mixture into the tin and cover with the second layer, then score the dough in the center to allow steam to escape.
- Brush the top of tourtière with the beaten egg and bake for 45min or until golden.
Please note:
- You can use 2 store-bought pie dough sheets to save time in the preparation of your maple tourtière.
- Depending on your taste, you can also add other spices such as thyme, bay leaves or Quatre épices (a blend of white pepper, ginger, nutmeg, and cloves)
