Looking for inspiration for appetizers that are original, quick to prepare, delicious and… vegetarian? These three veggie appetizers are sure to delight your guests. They are spicy, salty, and sweet. Bon appétit!

3 veggie appetizers recipes

Roasted Chickpeas

Prep time: 5 minutes

Cooking time: 40 minutes

Serves: 8

Ingredients:

  • One (1) can (540 ml) chickpeas
  • 1 ½ tbsp (22.5 ml) olive oil
  • 1 tbsp (15 mL) chili powder
  • ½ tsp. (2.5 ml) salt
  • Pink or black pepper, ground

Preparation:

  1. Preheat oven to 400°F.
  2. Drain and rinse chickpeas.
  3. In a bowl, combine chickpeas, oil, chili powder, salt, and pepper.
  4. Arrange chickpeas on a baking sheet lined with parchment paper.
  5. Bake for 40 minutes, stirring halfway through cooking.

Nutritional Information: 72 calories | 4g fat | 8g carbohydrates | 2g fibers | 2g protein

Sweet Potato Fries with Dill Dip

Prep Time: 5 minutes

Cooking Time: 40 minutes

Serves: 8

Ingredients for the fries:

  • 2 sweet potatoes
  • 1 ½ tbsp (22.5 mL) olive oil
  • 2 tsp (10 mL) paprika
  • Salt and pepper to taste

Ingredients for the dip:

  • 1 cup (250 mL) 2% plain Greek yogurt
  • 1/3 cup (80 mL) fresh dill, chopped
  • 2 cloves garlic, chopped
  • 1 shallot, chopped
  • Salt and pepper to taste

Preparation:

  1. Preheat oven to 400°F.
  2. Clean and cut sweet potatoes into 1 cm thick fries.
  3. In a bowl, combine sweet potato fries, olive oil, paprika and salt and pepper.
  4. Place in oven for 40 minutes, turning halfway through cooking time.
  5. During this time, mix all the ingredients for the dip and refrigerate.
  6. Take the dip out to serve. Ideally, prepare the dip a few hours before serving to enhance its flavours.

Nutritional Information: 82 calories | 4g fat | 9g carbohydrates | 2g fibers | 4g protein

Maple Glazed Pecans

Prep Time: 5 minutes

Cooking time: 20 minutes

Serves: 8

Ingredients:

  • 1 cup (250 mL) pecans
  • ½ cup (125 mL) maple syrup
  • 1 pinch of salt

Preparation:

  1. In a small saucepan, add pecans, maple syrup and salt
  2. Cook, over medium-low heat, until maple syrup thickens, and crystals appear on pecans.
  3. Place pecans on a plate or sheet pan lined with parchment paper. Separate so they will not stick together and allow to cool.
  4. Store in an airtight container until ready to serve.

Nutritional Information: 125 calories | 9g fat | 12g carbohydrates | 1g fibre | 1g protein
